We're off to Tampa Florida from NJ to avoid the snow, driving over a few days. In general we'll avoid major highways. Anyone suggest interesting destinations to stay or visit on the way?

Depends on what you're interested in (and the route that you're taking).

Washington DC, Charleston SC, Asheville NC and Savannah, GA all offer great photographic opportunities.

    So, my current plan is:
    • Friday: NJ -> Baltimore (3h). Visit Baltimore aquarium, and then a 3h drive to Charlottsville, VA, stay overnight
    • Saturday: A scenic 7h drive from Charlottsville, VA to Blowing Rock, via the Blue Ridge Parkway. Hopefully doesn't end up being too much longer than 7h.
    • Sunday: Visit either Grandfather Mountain or Linville Falls, and then drive to Savannah, GA, around 6h drive. Wander round Savannah, lithium1330 suggestions in hand.
    • Monday: Off to Tampa, 6h highway drive to the finish line, hopefully still married, and still with one daughter.

Reckon there must be some good photo opportunities in there somewhere, aspecially, along the blue ridge, in Blowing Rock, and Savannah.

Not sure if Williamsburg, VA is on your route, but the busch gardens is a pleasure to visit during this time of the year. Kids can have fun and you have some nice lights to photograph:

    Busch Gardens Williamsburg Theme Park

Good call on Busch Gardens might do that on the way back.
