I have an E-P2 and I would like to set the AF to use the center point by default. I can set it to one point but it keeps moving it around. How do I do this?

If it moves around without you actually moving it yourself, then it's not set to single point. :) It can only move around on its own if it's set to use the entire grid or a pattern of points on the grid.

Easiest thing to do is go to Menu => Sprocket => AF/MF => AF Area, and change it to the one that looks like: [ . ]
