I think I probably know that answer to this, but without WIFI capabilities, is there a reliable method of encoding the images from an EM5 with GPS Co-ordinates (hardware, software) ?

Use smartphone with a GPS logger and then in image import set computer to sync GPS data to photos basing it to timestamp. Just check that GPS logger application can export the route to open formats.

You can even use Lightroom to tag your photo with the GPS file, I am sure there is a lot of tutorial online.

And this is anyway exactly what the EM-1 does, it uses the phone as a GPS logger. The only difference is that the logs are transferred with wifi to the camera.
