I can't find any reference to HDR in Olympus Viewer 3. Did I miss it?

For me, it means taking multiple bracketed images and combining into one, preserving as much detail as possible.

I typically use Lightroom, but used to use Canon's DPP program when I had HDR sources from my Rebel. It did a pretty decent job.

If you want a good HDR image, set up you camera to do 5 images. It will then create an resulting image that is basically an example of what is possible. Better still put the 5 raw images in the the Nik Collection HDR efex Pro. There you can select from lots of templates or adjust the image manually to create the image you want.

You forgot one important ingredient, the exposure compensation step value between these 5 frames.
