Now, I think I know the answer to this, but bear with me! If I have a u4/3 lens thats, say, 40mm, that's equivalent to an 80mm SLR, right? Now, suppose I was to use a 40mm SLR lens with an adaptor, thats still 80mm equivalent right? Give or take a bit because of some extra distance from the sensor due to the adaptor maybe, but more or less?

Yes but the depth of field will be greater than an equivalent on a full frame.
i.e. on m43 a native 40mm will have the DOF of a 40mm but the field of view of an 80mm when the subject is at the same distance from the camera.

A warm welcome to the forum!

40mm lens on a m4/3 body gives always the 80mm equivalent field of view, no matter what the lens is. If it says 40mm on the lens barrel, you know it will give you the same FOV as any other 40mm lens, native or not.

To simplify: focal length (of any lens) x 2 = 35mm equivalent field of view
