Yep! And, for a kicker this time (our trip in late June-mid July), there were mountain goats on the other side of the tunnel, and I got some great pictures!

Can we narrow down the possible locations a bit?
Probably not New Zealand even if you are from there.
First broad guess is somewhere in Europe.

Blarney Castle, a few kilometers northwest of Cork, Ireland. Found it by looking for machicolations with smooth, rather than corbeled, supports. Highly anecdotal sample but all the others I saw in the same style within the small castle searches I was doing were in Ireland.

Probably the most photographed castle in Ireland. I was there a few times, and have kissed the Blarney stone, after which I had the gift of the gab bestowed upon me.

Not Poland either. Guesses so far are broadly speaking in the right part of the world but have not hit on the right country.

Sadly I reached this city on a cheap flight, nothing as glamorous as a cruise. Your wife has a point in that this city would indeed be a likely port of call for a cruise on that route. However it is not Bergen or anywhere else in Norway - the guesses so far are circling around the correct country.
