I'm new to m43s. I have a Canon mount Sigma 150-500 that I would like to play around with. Is this doable? I understand it will be a manual lens but 1000mm would be fun for slower moving wildlife. Thoughts? Also what adapter do I need?

Using a Metabones or Kipon EF-M4/3 adapter it can auto focus (metabones is AF on Panasonic only) and you will have aperture control.

It's random and unpredictable how well it will work though, depends a bit on the age of the lens and how good you are at dice.

I don't want to spend the money for a MB. I have a Canon 7D that I'll use if I want full control. I just thought it would be fun to have a cheap adapter for my em10.

there are plenty of cheap EOS-MTF converters but I'd want to pick up a good one, one can handle the weight of a big zoom lens.

I have both the Metabones and Kipon adapters, and they both work fairly well with all my Sigma lenses - I have about 12.
