My favorites are: Ansel Adams' Examples:The Making of 40 Photographs, where he provides the back story on some of his favorite works. It's not all about f-stops and has good stories for the non-photographer. National Audubon Society Guide to Landscape Photography which blends great photos with a ton of info about equipment and technique.
