On my GX1, It would be
1) Pana 20mm
I like this "almost standard" field of view and low light performance.
2) Add Pana 14mm
This is my m43 only setup, which I use.
3) Add portrait lens - Oly 45mm 1.8
This for me is next step in my m43 gear, but I will buy it someday, for now I use my cheap Canon 50mm 1.8 with adapter, from my DSLR bag :) Actually this setup will be with me for my vacation.
4) Add telephoto - Pana 100-300mm
Last one in setup I could be able to use is long tele. For now I'll stick with Oly 40-150mm 43lens, which has slowwwww AF on GX1. But I don't need it too much.
4 Dream Team) Pana 7-14mm, Pana Leica 25mm 1.4, Oly 45mm 1.8 and Pana 100-300mm :)

Based on lenses I have or have on order (the 75):
1: 12-35 f/2.8
2: 12-35 f/2.8, 75 f/1.8
3: 14 f/2.5, 25 f/1.4, 75 f/1.8
4: 14 f/2.5, 25 f/1.4, 45 f/1.8, 75 f/1.8
.... With 20 f/1.7 as my lens cap. ;)

On my E-M5:
1: Mostly the 25/1.4, but the 12-50 kit get used quite a bit also for its versatility or the Zuiko 14-54MkII
2: 12-50 + 25/1.4 or 45/1.8 or 7-14
3: 7-14 or 12/2 or 12-50 + 25/1.4 + 45/1.8
4: 7-14 or 12/2 + 25/1.4 + 45/1.8 + 14-150 or 12-50
It used to be very simple for me. It used to be pretty much the 12/25/45 trinity + 2 PEN bodies. With my recent purchase of the E-M5 + 12-50 and the 7-14, I find it much more difficult to decide which lens combo to bring. I also find myself using the 12/2 a lot less, but the 12/2 is such a beautiful lens that I don't want to part with it... (Just like my E-P3, which just doesn't get used at all these days since it is too bulky to work as a back-up for my E-M5. I use the E-PL3 for that purpose instead)

Hkpzee... I have found the same thing... Having a lot of different lenses to choose from makes the choice as to what to bring much more difficult. Sometimes I've resorted to a large bag with a lot of lenses that stays in the car and a smaller bag to work from while out of the car-supplied by the bigger stash in the car. Crazy. So many great choices. We are blessed as m4/3 shooters.
One of modern man's dilemmas in the developed cultures like the USA is that as consumers we've got so many different choices in almost any product and service you can name that we can become paralyzed by the decision making process. No exception in cameras, formats, lenses, bodies, etc.

I'm down to the minimum of gears and almost maximum of what i need
2 bodies most often, but when out shooting with only i'm taking the 14/2.5
1 lens -- 14/2.5
2 lens -- 14/2.5 + 30/2.8
3 lens -- 14/2.5 + 30/2.8 + minolta 50/1.7
4 lens -- having to deal with 3 lenses and to choose which to use is hard enough. But if youre pushy i'll add the wanderlust pinhole pinwide (its a "lens" cap so it doesnt count)

3) Three lens - Oly 45 mm 1.8, Nokton 17.5 mm .95 and Olympus 14-54mmMKII

Based on what I own:
1: panasonic 20mm f1,7
2: 20mm + olympus 45mm f1,8
3: panasonic 45-200mm (I'm thinking to change it with the olympus 50-200 2,8-3,5, but it's slow to focus)
4: olympus 12-50 (a good all-rounder for rainy days or close ups)

What I have and use today...
1. 14mm - most used
2. 14mm, PL45mm (love macro photos and this handles portraits pretty well, although macro AF focusing can be mildly annoying sometimes)
3. 14mm, PL45mm, 20mm
4. 14mm, PL45mm, 20mm, 7-14mm (just acquired so limited shooting so far)
Plans for very near future
1. 12-35mm - love 14mm but can't justify after this, 20mm will get to stay though... Need at less one pancake if you are a M43 lover
2. 12-35mm, Oly 45mm
3. 12-35mm, Oly 45mm, Nikon 55mm 3.5 macro (I hear manual focusing is the way to go for macro shooting and this is one of the sharpest macro lens out there)
4. 12-35mm, Oly 45mm, Nikon 55mm 3.5 macro, 7-14mm

I'll base my list on the lenses I own right now: the kit lens and some legacy oldies.
When I still used my Nikon FE, before 2004 that is, I settled on 24mm and 50mm primes as my preferred combination - a very fine 180mm 2.8 AF-D had to go. Here is what I'd take with my PEN:
1 Lens: Oly 14-42 IIR zoom (at night, the 50mm 1.8)
2 Lenses: + Nikon 50mm 1.8 E . For low light, short DOF, portrait. I start to appreciate the short tele range.
3 Lenses: + Soligor 75-260 4.5. The Soligor is nice for Video only, with a tripod. For what it is it is compact but it weighs a ton and look ridiculous on a small PEN. I'd take it along on a nature trip, not if I have to carry it all the time though.
4 Lenses: + Nikon 24mm 2.8 AF-D. It is sharp but heavy. I do not see much advantage over the 14-42 yet - except for video.
The lenses I may buy next, and why I probably won't buy them soon:
Pana 20mm 1.7: I like the FOV but slow AF. Better alternatives may come up.
Panaleica 25mm 1.4: I hear it has good optics. I may find the FOV too narrow. I'm afraid €100 goes to the 'Leica' logo. Example: Leica EVF-2 costs 2x as much as the identical and interchangeable Oly VF-2
Olympus 45mm 1.8: It is light, has AF and I think it will outperform my 50mm. Yet I already have the 50mm, and want to keep it for video.
Pana 14mm 2.5: I'm not sure there is much advantage over the 14-42.
Oly 12mm f/2: I'd love to have it but it is too expensive for me.
Panaleica 12-35 2.8: Too expensive for me but if I could use it next to the 45mm 1.8 I'd be very happy.
Guess I have little talent for GAS.
